Having multiple monitors when working is awesome!
Writer Terry Pratchett thought that having several monitors was useless, then he tried with 2, then 3.... and so on. In the end I think he had 6.

As Regorn started, it's not about Multitasking. It's about access of information.
When working on something, say writing a report about some scientific data. Having that data on a screen so you never have to alt-tab, just turn your head/eyes a little. Makes writing easier as you can then write and read at the same time. Not having to check the data between it and remember it. So the process gets more efficient.

Having Email and Calendar access is also a working thing that's good. You see you get an email, and you can instantly look at the sender and topic and judge importance. Instead of having to, again, tab around between windows or fiddle with your phone.
Important email? Get it done. Something irrelevant, leave it unread until later.
Calendar access helps planning if you get a phonecall, and you can make deadlines and such very viewable. I know when my mother is working she almost always have her physical work calendar on her desk so she can look around in that if she needs.

The IM part and Video/Music part is not work related. But well. Never claimed I wanted it for work. I miss having two screens when I had a "Work Screen" and a "Video/Music+Chat screen". Even if most of the work I did was play games.
Most people with more than two screens are professionals who do it so they can DECREASE multitasking by having as much information at hand as possible at the lowest effort. That way they can increase productivity since they can see things with ease and with the "New information and calendar" screen plan if it's urgent and important or not.

So this isn't about "OMG I WANT TO DO FIFTEEN THINGS AT ONCE!" It's more
"It's nice to have a bigger work-space, even if it's digital".

I'd love to have two screens, actually...
Especially with drawing, for example. So I won't have to keep tabbing away from my drawing program to answer something on skype, or to find a fitting reference picture, or a 'how to' guide to color something.. Which is just annoying as sometimes they're step by step and I have to tab between internet/drawing program for every step, and memorize stuffs. (like brush settings..) And it makes it harder for me to compare the two things to see if I did it right!
Also, I just use my tv as second screen at times, so I can put on a movie from my laptop to there. (Though that is too far away for drawing or anything else.) Easy! :D

But should invest in a secondary this year, or early next.

I did say -more- than two screens.

I am totally supporting two screens, as I get my computer table changed I plan to use em myself. So I can do something else during slow Roleplay for example.
And they call me insane? I am the most sane person around!

For causal "fun" use I would agree with you. However, for a workable setup I don't.
For several things lots of information can be very important. For some jobs email and planning are very important at the same time as the former. Had my mother had two screens for her work I'm fairly certain she'd always have her mail open on the second. When working she has it open anyway but needs to tab to get at it.
Multiple screens gets important with data intensive work where it gives ease of access. So, you (again, as I said) don't want multiple screens for multitasking. You want it so you can focus better on whatever you're doing by only needing to turn your head for information.

But I've met this issue mainly through work where our bosses think multitasking is actually something that works.

And so, promote having multiple screens.
